Baked Zucchini Latkes with Feta Cheese and Mint

A healthy Hanukkah recipe for the whole family

Ingredients

  • 4 large and hard zucchinis
  • 1 red, medium-sized onion
  • 1 garlic clove, crushed
  • 1 egg
  • 100 gr. feta or any other salty cheese (preferably 5% fat)
  • 3 tablespoons breadcrumbs (preferably whole wheat)
  • 3 tablespoons fresh, finely chopped mint leaves
  • Ground black pepper
  • Salt (careful, the cheese is salty)
  • A sprinkle of canola oil for oiling the parchment paper

Preparation

  1. Preheat the oven to 180 degrees Celsius.
  2. Grate the zucchini and onion with a coarse grater. Squeeze with your hands. Leave in a sieve for 30 minutes to drain excess liquids. 
  3. Add all the other ingredients and mix well.
  4. Grease parchment paper (wipe parchment paper with kitchen paper dipped in some oil).
  5. With oiled hands, form latkes and place them on parchment paper.
  6. Bake for half an hour in the oven, use a spatula to carefully flip the latkes, and bake for 10 more minutes until the surface is golden-brown.
