Date and Apple cake

A recipe for Rosh Hashanah

No added sugar is needed. 

Ingredients

  • 15 Majhol dates (250 gr.)
  • 1 green apple
  • ½ cup boiled water
  • 2 eggs
  • ¼ cup canola oil
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • A pinch of salt

Utensils

• Food processor
• 1 bowl
• 2 English cake tins or 1 12-cup muffin tin 

Preparation

  1. Preheat oven to 180 degrees Celsius.
  2. Oil the tins or the muffin tin.
  3. Soak the pitted dates in boiling water for 10 minutes. Place in the food processor and process until you get a smooth consistency. 
  4. Add the eggs and the oil and mix once more, to a smooth consistency without lumps.
  5. Add the flour, baking powder, cinnamon and salt, and process to an even dough.
  6. Peel the apple and cut into cubes.
  7. Transfer the batter into another bowl and mix manually.
  8. Transfer the whole batter into the tins or muffin tin.
  9. Bake for 35 minutes (30 minutes for a muffin tin).
