Ingredients
- 4 large and hard zucchinis
- 1 red, medium-sized onion
- 1 garlic clove, crushed
- 1 egg
- 100 gr. feta or any other salty cheese (preferably 5% fat)
- 3 tablespoons breadcrumbs (preferably whole wheat)
- 3 tablespoons fresh, finely chopped mint leaves
- Ground black pepper
- Salt (careful, the cheese is salty)
- A sprinkle of canola oil for oiling the parchment paper
Preparation
- Preheat the oven to 180 degrees Celsius.
- Grate the zucchini and onion with a coarse grater. Squeeze with your hands. Leave in a sieve for 30 minutes to drain excess liquids.
- Add all the other ingredients and mix well.
- Grease parchment paper (wipe parchment paper with kitchen paper dipped in some oil).
- With oiled hands, form latkes and place them on parchment paper.
- Bake for half an hour in the oven, use a spatula to carefully flip the latkes, and bake for 10 more minutes until the surface is golden-brown.
